“My recent attendance at the Mimi Bite Gastronomic cooking school classes was truly an incredible experience. The school was fully equipped with every imaginable culinary tool, making me feel right at home.
Each year, I embark on a culinary safari to various stunning destinations abroad to broaden my knowledge and skill set. This year, I was particularly inspired by sampling and deciphering the secrets of traditional Basque cuisine, which was unquestionably the highlight of my trip. Mediterranean food always captures my heart, and being able to incorporate so many new ideas, flavour combinations and inspiration into my restaurant in the Faroe Islands is profoundly fulfilling.
The school was conveniently located in a luxury hotel in San Sebastián, the Maria Cristina, a stone's throw away from the iconic old town.
Learning the secrets of various cuisines is always enlightening. The ingredients used in any dish are influenced by the climate, culture, the country's weather, and what is grown and cultivated from the land, water, sky, or ground.
While the dishes, techniques, methods, and ingredients I learned about in Spain may seem foreign and unlikely to be used in my culinary home in the Faroe Islands, it's about satisfying my chef's desire to learn, understand, and possibly adapt.”

Meet the Chef/Founder
Born and raised in Ethiopia, Rose Poulsen’s love for cooking began at home, inspired by her mother’s passion for preparing fresh, organic meals and her father’s skill as a farmer. Growing up in a household that valued natural, homegrown ingredients shaped her philosophy as a chef one that celebrates health, sustainability, and flavor.
Defying societal expectations that discouraged girls from pursuing education, Rose insisted on attending school and advocating for equal opportunities for women. With her family’s support, she earned a Diploma in Social Sciences, proving that determination and courage can overcome any barrier.
Her journey across the globe from Dubai, Bahrain, Yemen, Saudi Arabia, Cyprus, Norway, Estonia, Germany, Turkey, to Denmark where she immersed herself in diverse culinary traditions and techniques. Each destination added a new layer to her cooking style, blending global flavors with her Ethiopian roots.
It was in Bahrain that she met her husband, Pól, a former Sailer on the Mærsk Danish commercial vessel and a fisherman from the Faroe Islands. Together, they built a life in Ljósá, combining their talents his expertise in sourcing and smoking the finest local fish, and her mastery in crafting dishes that celebrate both land and sea. Today, Rose’s Restaurant & Catering is known for its fresh cod, smoked salmon, and organic ingredients, all prepared with love and authenticity.
